Happy It’s Almost Friday day! (IAF) I always love Thursday. It’s the day that’s so close to the weekend you can practically smell it. My favorite class at the gym is on Thursdays and I can officially start making the “weekend list.” Note, it’s a to do list, but the list is usually more fun activities than chores. It’s my OCD tendency to want to make lists for everything – even if it’s just to be silly. How ‘bout you, do you make lists?
Speaking of Thursdays, I went to my favorite class this morning – bootcamp! It kicked my A$% today. The instructor did 1 minute drills of high intensity cardio intertwined with some strength drills. It was a great workout! I’m dying to try swimming again now that the stitches are out. Maybe tomorrow…
On to the food!
Over the past couple of weeks while my finger has been laid up, I have had to rely on more convenience products and shortcuts rather than my usual “from scratch when ever possible” mentality. For instance, usually I would make chickpea patties/cutlets for lunch to use in sandwiches or crumble over a salad. Luckily, I had a few premade and frozen when my accident happened, but they didn’t last long. So, last week I bought this:
I usually don’t like to eat “faux” meat type substitutes, but I also wanted to have some variety. The Lightlife Smart Ground crumbles were actually much better than I expected. (Although I am scared of “smart” products.) It wasn’t overly salty like some of the processed fake meats, and had a very neutral flavor. My only “beef” with the product (oh, the silly puns I make huh) was the isolated soy protein that it contains. I don’t mind soy protein, but the more processed isolates/concentrates I’m trying to cut down on. The nutritionals: 70 calories per serving and 13 grams of protein, sodium was 310mg.
I served it over a salad and it was a nice substitute for my favorite chickpea patties. Would I buy it again? Probably, but only if I was in a bind…or a splint. I like homemade better.
