Bowl Meals

Happy Monday Bloggies!  Did everyone have a great weekend?  I sure did – the weather finally warmed up and we were able to spend lots of time outside, including some time at the park.

So, to recap last week, I did a week of new classes at the gym to mix up my workouts and better utilize some of the classes the gym offers.  I didn’t post Friday, but I did try a new class, Stroller Strides.  It is a one hour class done outside.  I mix a of cardio circuits with strollers that is easily modifiable to different levels.  (Some moms are just 6 weeks post partum.)  A few props are used like resistance bands and hand weights.  Overall, it was fun, and very socializing.  I don’t think I got a fantastic workout, but I definitely moved!  I’m not sure I will do it again, as it is an additional fee.  My purpose is to better utilize the already pricey membership.  To end the week, Saturday was a well deserved rest day!

On to food! 

Over the past week or two, I’ve discovered a great way to make quick easy use of leftovers by creating a spin on “bowl meals.” 

This bowl came together in less than 5 minutes with the help of leftover spaghetti noodles and frozen cooked shrimp.  Seriously, this easy:

1.  Put fresh cut broccoli in a big bowl and microwave for approximately 3 minutes. 

2.  Add leftover pasta noodles, defrosted shrimp, and a couple of sliced mushrooms.  Microwave until everything is heated through to desired temperature.

3.  Stir in a little fresh spinach and sprinkle with parmesan.   At the last minute I also added an unpictured dollop of Greek yogurt for more creaminess.

I love keeping a bag of frozen precooked shrimp in the freezer.  It makes the perfect “instant” protein.  Just thaw in a bowl of cold water and in 3 minutes you have shrimp cocktail, or an easy add in to pasta, salads, or stir-fry. 

Next up, is my “leftover grilled vegetable and quinoa bowl.”  Every weekend we grill up an assortment of fresh veggies.  This usually gets us through a couple of nights.  I decided to take some leftover quinoa  and top it with the veggies, that were cooked over the weekend, and topped with a big blob of hummus for extra protein.  (And a drizzle of balsamic syrup for flavah!)

  1. Love the bowl ideas!!!! Leftovers ususally end up in the freezer for another night but I really like your ideas!

  2. Yum....I do the bowl thing too!! I just throw whatever I have left in a bowl with pesto...pesto usually goes with anything that I make!! Or I throw it on top of a salad!!

  3. OMG she looks sooo adorable in that swing!

    and can you believe the nooch in the bulk bins was sold out!? but honestly, and you may buy it from the bins, there is something slightly creepy bout bins b/c i know i have to watch skylar like a hawk or she touches everything...and i wonder if other people's kids or their own hands, are really clean?! hmmm maybe i dont want the answer :)

    TJs whole grain dijon..sounds good... i am not usually a dijon girl, i mean it's fine but i like sweet or sharp, i.e. yellow or honey.
