Happy Friday! Is everybody doing the Friday dance?
I did the “Friday Walk.” A little over a month ago, a friend that I had lost touch with in the past year and half, and I instituted Friday morning walks with our babies. More about that in a minute…
You see, we lost touch, because I only knew her as an instructor of a weight lifting class at our gym. I used to religiously take her 6 am class every Thursday for a good 2 years. And being that it’s 6 am, you get a quaint little group that all look out for each other, etc. She stopped teaching around Thanksgiving about a year and a half ago. I didn’t really know why, as at the beginning, there were “subs” for her. Then, I had my own hiatus before and after Ava was born, and never really got back to the 6 am thing anyway. Come to find out recently from someone else at the gym, she had twins, 2 weeks before Ava was born. So I contacted her, and we found that now that we are both stay at home moms, we needed to get together with our kids. So, Friday morning walks just began.
So, our “Friday Walk,” is my workout for Fridays. A walk may not sound like much, but we walk for 1 1/2 to 2 hours on hilly paths. 2 weeks ago, I estimated based on previous mileage of the area, that we walked close to 10 miles. It is also a wonderful way to catch up chatting about food, babies, exercise, life, and all things girlie. It’s something I look forward to all week. Another way in which exercise is fun!
On to the eats:
Last night we had a quick and easy meal with the help of a little leftover tofu.
I forget how much I love stuffed acorn squash. Usually, I will do something a little more creative, but this was quite good. I cut the squash and half and let it roast. Meanwhile, I sauteed a little chard from the garden with some shitake mushrooms. I added in the leftover cubed tofu and added seasonings (salt, pepper, garlic powder and spike.) Stuffed into the squash half, topped with some nutritional yeast and baked for another 10 minutes. Thrown along side of some massaged kale salad, and we had a colorful and nutritious easy dinner. Gotta love that!
