TGIF! Not only is it Friday, but it’s Friday before a long weekend. And not only is it Friday of a long weekend, but it’s the long weekend that officially kicks off summer! Woot! Woot!
Let’s take a moment to raise a glass to all of the men and women who have served for our country. Without them, we wouldn’t be here blogging freely.

We are staying in town, and getting together for dinner parties and bar-b-ques with friends all weekend. I think I’m also doing a 8 to 10 mile hike on Sunday in the McDowell Mountains with my friend, Sarah. We shall see…

Another signature appetizer of mine is the Cheese Filled Endives leaves. Substitute blueberries for the cranberries, and you have a red, white and blue dish.
If you’re grilling, don’t forget the wonderful plethora of veggies you can throw directly on the grill. (Tofu is optional.) (No recipe necessary)
